I am wondering if the aluminum frame seats can be moved to a more central position for single handing on the Escape Duo Deluxe

Great question. Unfortunately the seats can't be moved or more to a centre. Both the front and back seat site in the tracks to each side of the seat and then back of seat in a recessed spot on the deck that holds it in place.
See picture below.
For paddling with one person you could remove the front seat or fold the backrest flat and then add some weight to the (secure it too) in the bow area to weight the kayak down at the front and make it so the bow is not sticking up in the air for easier solo paddling.
